Bourgogne is home to exactly 100 AOCS (Appellation d'Origine Contrôlée: "Controlled Designation of Origin"), which are found throughout its six sub-regions: some of the most famous domains and the best wineries in Burgundy are located in the area known as Côte d’Or (“Golden Slope”), which encompasses Côte de Nuits and Côte de Beaune. Other more recent Burgundy wineries shelter fascinating vaulted cellars filled with wines dating back to the fifteenth century, or boast state-of-the-art techniques for the production of the local sparkling wines, Crémant de Bourgogne.
