Spanish Brandy is a well known product that has a lot of people patronising it in recent times. The brandy of Penedes is a niche product that has been kept to the borders of the region of Catalonia. On this exquisite tour, come discover the well-guarded secrets of Catlonian brandy.
The brandy of this region is made using highly acidic grapes which are also used in the production of the speciality of the region, Cava. The grape varieties such Macabeo, Xarello and Parellada are the common ones used in the traditional production of this grape spirit. The grape juice is distilled using a charentais or copper pot still distillation system, much like the one used in the distillation process of its close cousin, Cognac. The grape liquor thus formed is aged in special American oak or French oak casks for over a period of time and are then blended to create that perfect bottle of brandy.
In this hands-on workshop you will discover step by step the production of brandy. Through an introductory workshop and a visit to an exquisite brandy aging cellar you will understand the key principles that are taken into consideration while making this fine spirit of Penedes. Once you've understood the process, you will have the incredible opportunity to go and create your own blend of delicious brandy by blending the different samples. Carefully under the discretion of the cellar master you will create your own signature blend of brandy. You will be able to choose between two different styles of ageing: dynamic (traditional method involving the solera system of ageing) or static (relatively modern and quicker method based on ageing in the Anadas system).
After you create you own blend, you can let your imagination run wild and design your own personalized label for your newly blended bottle. You can then proudly take your bottle home with a personalized label.
