Philosophy

“Osadía” means to dare, challenge, be audacious. At Osadía de Crear, the aim is to create something new for the palate, starting with local ingredients and diverse cooking techniques, and drawing inspiration from the winery’s natural environment and dramatic Andean landscapes.

Guests are invited to enjoy special moments in the dining room, which is designed to emulate the warmth of the family-owned winery. Located in Susana Balbo’s old home and overlooking 18 hectares of vineyards, Osadía de Crear is a perfect place to take in Mendoza’s natural beauty while savoring excellent Argentine food and Susana Balbo wines.

Menus

The team at Susana Balbo Wines takes pride in the quality, simplicity and flexibility of its gastronomic experiences. In the dining room, guests can enjoy an a la carte menu or wine pairing menus of 3 or 5 courses complemented by award-winning Susana Balbo wines. Vegetarian and gluten-free options are available.

The pairing menus take guests in a culinary journey through Argentina, based on a selection of dishes from the Osadía de Crear menu crafted by Argentine chef Hernán Gipponi. Each course is carefully combined with wines from the winery’s Crios, BenMarco and Susana Balbo signature lines. and designed to awaken diverse sensations through harmony or contrast between the wine and the food. Susana Balbo and her team personally participate in the search for the perfect pairings.

Our paired menus:

  • KM 0: This 3-course menu is based on regional products sourced from producers located up to 100 km away from the winery. The chef also includes fresh ingredients and herbs from the winery’s orchard.
  • Argentina from the mountains to the sea: A 5-course menu that seduces the palate by featuring the diverse flavors of Argentina, from native Andean root vegetables to southern hake from Patagonia.

Osadía de Crear offers hospitality service for private groups or companies, including meetings and lunches. Catering is always provided by the chef. (Requires prior reservation).
