Every year, we produce 400 to 600 bottles from the grapes in our gardens, all organic. The grape harvest takes place between the end of September and the beginning of October, and the date is only defined a few days in advance: optimal and weather maturity are not elements that we can control!
The vineyard of Le Saint-James was planted in 1989, at the same time as the creation of the hotel. The roots of our region were the base of Jean Nouvel's project: tobacco drying sheds to represent the southwest, the vineyard to represent Bordeaux.
The hill of Bouliac has a calcareous base, which is why the choice of Merlot was the most appropriate. 1600 m² of vineyard were planted on an exposed hillside facing west: an ideal situation for a full expression of soil. The vineyard of Le Saint-James is the smallest one of Bordeaux.
