Chef Guido's Profile
Born in Naples, Guido became entranced with cooking and being inside kitchens while watching his parents, two excellent home cooks, create delicious, traditional Neapolitan dishes. As a young man, Guido worked as a master of ceremonies in fine resorts and hotels where, among many other things, he taught archery, professionally played the trumpet and sang popular Neapolitan lyrics.
Guido always felt his true calling was traditional Neapolitan cuisine, and he continued to delight family and friends with his masterpiece creations in the kitchen. After ten years of trying his luck in the business world, he decided to finally fulfill his dream of becoming a professional chef. He earned his diploma from the professional school A Tavola Con Lo Chef, an institution recognized for excellence by the Latium Regional Cooks' Union, and by the Federation of Italian Cooks. He has since accumulated experience and a loyal following in the critical, hard-to-please culinary circuits of the Trastevere district of Rome, where he has lived for the past 20 years.
