Vivien Durand, Pyrenean in origin, was impassioned by the kitchen from a very young age.

He is an unformatted, casual chef who likes to make his own rules.

He won his first Michelin star at the "Eguiazabal, Le bar a vin" in Hendaye in 2013. Michelin's choice to offer him the star left the whole culinary world surprised.

As he became the first chef in the ‘Livre Rouge’ to offer tapas on the menu!

Vivien set his knives in the kitchens of the "Le Prince Noir" in 2014. Here in Lormont he was awarded his second star. In this restaurant, the kitchen evolves its menu according to the products available; a concept which is completely outside the general framework of how restaurants work.

With the casual and free atmosphere in the restaurant, Vivien is driven to choose only the most interesting products for his menu and talented men for his team. He looks for the best and finds it.

His team and his kitchen are so inspired that the incredible level of technique involved in preparing the dishes is masked to reveal great simplicity packed with maximum flavours.
