Pauillac AOC is located on the left bank of the Gironde and combines exceptional climatic and geological conditions, which allows it to produce very fine wines. Capital of the Médoc wine, the port city of Pauillac gave its name to the appellation. The wineries of Pauillac have a special place in the Bordeaux wine region. The AOC can boast of having three wines in the first five grands crus classés of 1855: Lafite Rothschild, Latour and Mouton Rothschild. On its 1,200 ha of vines, Pauillac produces 54,000 hl of red wines each year. Though certain amount of white wine is produced as well.

Pauillac is a jewel of the Médoc, it is home to 18 classified crus which represent 85% of its production. Perched on a beautiful ridge of gravel, its soil is planted with Cabernet Sauvignon blended with Merlot and to a lesser extent with Petit Verdot and Malbec. Experts agree that Cabernet Sauvignon has found its favorite terroir here. The wineries in Pauillac thus concentrate their wines on the fine characteristics of this grape variety.

Pauillac's palate is full-bodied, rich and complex, highlighted by fine, full-bodied tannins. These wines are exceptionally cellar-worthy: they have a great aging potential, from 15 to 25 years old, and even more for some of the high-end wines. With the years, the tannins round out and the bouquet of aromas opens up. They lose their aggression to become fine and delicate, while retaining their power.
