The Capocollo of Martina Franca is, simply, the most known and appreciated local product, born from ancient Italian rural traditions that have preserved it until today, thanks to the slow marinade and the perfume of the smoking with the bark of Fragno, a typical oak of Valle d'Itria.

The guided tour includes the explanation of the entire production process of the Capocollo di Martina Franca (processing, bagging, smoking and maturing), with a tasting of home-produced cured meats at the end, including wine, bread and products from oven.

There is the possibility to choose between the following 2 tastings:

  • Guided tour and tasting of 4 cured meats + 2 cooked cold cuts and pairing with a wine
  • Visit and light lunch, which includes guided tasting of 4 seasoned cold cuts + 2 cooked cold cuts and pairing with a wine, fresh and aged cheeses, bread, taralli, focaccia.
